BOURBON BALLS


1 CUP VANILLA WAFERS
1 CUP CHOPPED PECANS
1 CUP POWDERED SUGAR
2 TBLS COCOA (or substitute equal parts carob)
1/4 CUP BOURBON
1-1/2 TBLS CORN SYRUP

Dry Ingredients:
Crush vanilla wafers (blender okay)
Add chopped pecans to the crushed vanilla wafers.
Mix the pecans, wafers, powdered sugar and cocoa.

Liquid Ingredients:
To the bourbon, add the corn syrup.
Mix the liquid with the crumbs mixture.
Form into small balls and roll in powdered sugar.

Refrigerate

NOTES: One 12-oz box vanilla wafers makes 3 cups crumbs
Three 3/4-oz bags of pecans makes 1 cup crushed pecans

IMPORTANT NOTE: These are great for the holidays, but be aware that, unlike foods cooked with alcohol, the alcohol in these candies is still quite lethal!
